This dessert is a healthy and nutritious way to satisfy your sweet tooth. Chia seeds are a great source of fiber and omega-3 fatty acids, while berries are packed with antioxidants and vitamins. The almond milk adds a creamy texture without the added sugar of traditional dairy milk.
What You Need
1 cup unsweetened almond milk (or other milk of your choice)
1/4 cup chia seeds
1/2 teaspoon vanilla extract
1 tablespoon honey (optional)
1 cup mixed berries (fresh or frozen)
What To Do
In a bowl, whisk together the almond milk, chia seeds, vanilla extract, and honey (if using). Mix well and let it sit for at least 10 minutes, stirring occasionally. The chia seeds will absorb the liquid and thicken the mixture.
While the chia seed mixture is thickening, chop the mixed berries and set them aside.
Once the chia seed mixture has thickened to a pudding-like consistency, stir in the chopped berries.
Serve the pudding in individual bowls and garnish with additional berries, if desired.
