What You Need
For the Pie Crust:
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, cold and cubed

In a large mixing bowl, combine the flour, salt, and sugar. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
Preheat your oven to 425°F (220°C). On a floured surface, roll out one disc of pie crust to fit a 9-inch pie dish. Transfer the crust to the dish, leaving any excess hanging over the edges.
In a large bowl, toss the sliced apples with lemon juice. In a separate bowl, mix together the granulated sugar, brown sugar, cinnamon, nutmeg, salt, and cornstarch. Add this mixture to the apples and toss until evenly.
Pour the apple filling into the prepared pie crust. Dot the top with small pieces of butter. Roll out the second disc of pie crust and place it over the filling. Trim and crimp the edges to seal the pie. Cut slits in the top crust to allow steam to escape.
Brush the top crust with the beaten egg and sprinkle with sugar. Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 50-60 minutes, or until the crust is golden brown and the filling is bubbling. Allow the pie to cool before slicing and serving.
